While Laboratory Maniac is on the field under your control, during the upkeep, play Spoils of the Vault naming a card that's not in your main deck and, in response, play Angel's Grace and win at the beginning of the draw step.

This usually will not work. Spoils of the Vault causes "loss of life". Damage also causes "loss of life" however Spoils is not causing any "damage". Paying/losing life cannot be prevented due to the fact that prevention in Magic: the Gathering only deals with damage. I ran a deck back in Urza's Saga with Worship and all it took was a Stormscape Apprentice's ability and I lost the game by LOSING that last 1 life.

You're missing the other part of Angel's Grace that says you can't lose the game until end of turn. It doesn't matter that you're at -30 life if you win in your draw step due to Lab maniac.

You could also use Demonic Consultation naming Scornful Egotist (or some other card that isn't in your deck) at the beginning of your upkeep without using Angel's grace if you're not playing modern.
Divining Witch could also work.
