Stack the triggers to sac a creature first, then bring it back with sheoldred same turn

Not sure whether this works, Sheoldred says "target" creature. So when you put the triggered ability on the stack the creature targeted by Sheoldred has to be already in the graveyard.
So make sure that at the beginning of your upkeep a creature is in your graveyard.

That is correct. All effects that trigger at the same time have to be legally targeted at the same time too.
