The combo is pretty simple, but unlimited mana and creatures early on.

Its not unlimited mana. Ivy Lane only eliminates a single -1/-1 per token you make, but you create replace that -1/-1 every time you make a token. So you'd still be limited to the normal number of times you're supposed to be able to use that creature before it dies.
A second Ivy Lane Denizen would allow for the mana.

You're right. But either way is still nice.
