you have to play the speciman before they choose what to put into play from the worms ability. and the wurm is a "may" ability so they don't need to put anything into play, or they could put land, artifact, or enchantment into play and no creatures so you get nothing.

You can't cast gather specimens during the wurm's ability resolving, so you have no way to catch their creatures without playing the gather specimens first.
