It is worded in such a way that it doesn't go off for each creature. NOW, if you are running an instant speed Blaze (like Ghitu Fire) giving an unblockable creature doublestrike (or doublestriker with Bedlam) WOULD make the lands untap twice...the only question is whether or not you can tap your mana in between the two damage rations.

My reason as two why doublestrike works this way:Markov Blademaster.

My thing is, if all your creatures can't be blocked then you should be winning the game without the need of a fireball.

Thing is, their creatures cant be blocked, either, so it's a backup scenario

You loose mana from your mana pool at the end of every step. All the mana that you tapped durring the first main phase, will be gone by attack. These cards do get you aditional mana, but they do not combo.
