So how would this work? Would the Seeker be allowed to target itself for its ability (tap then untap)? If that's the case then kudos to you, good sir, for the combo.

As nice as that looks on paper, the valid target MUST exist BEFORE the cost can be paid. A for effort though. BTW, lv.3 DCI judge.

The elf is a valid target.  It only needs to target a creature.  It doesn't matter whether that creature is tapped or untapped.  So this does work.

Yes, the target must exist prior to the activation, but of the cards that require a target there shouldn't be a problem.  Insolence targets the Elf when cast and is attached while on the battlefield.  The instant targets the Insolence and sets up a damage prevention shield and delayed trigger attached to the card that was targeted.  The Elf targets itself and has no restrictions on whether it is tapped at the time of activation (ie. 'T: Untap target tapped creature').

Any removal of any of the cards or making them illegal targets will shut this down quickly with the exception of the instant after it resolves.  Once that has resolved your opponent will still be able to interrupt your actions but will have to chose wisely when to do so.  Casting a creature removal spell at any point where it's untapped will allow the Elf to respond to that action with doing the whole thing over again.

On a side note, just got my L1 last week!  Hoping to study for my L2 in a year or so :).  What region do you manage as an L3?
