it says swamps if tapped for mana produce Green but lets say you had a mountain and with urborg its a moutain swamp, even if your tapping it for red which would actually be white, you are tapping a swamp for mana which would produce green. Since this is a forced ability do you have a choice, is is one mana or the other green or white. or is it both providing a total of 2 mana both green and white.

Well, since lands can only produce one mana at a time, if you have a Mountain/Swamp, it's a choice between green or white mana in that respect.

To expand on what Greg said:

The 5 basic land types each have an inherent mana ability (currently they are the only subtypes which have attached rules).

e.g. a Forest inherently has 'tap: add G to your mana pool' in addition to whatever effects are printed on the card.

Reality Twist replaces these abilities, e.g. the Forest's ability changes to 'tap: add B to your mana pool'.

Urborg simply makes all lands count as Swamps in addition to whatever else they would have, so an existing Forest would have both the Forest and the Swamp subtypes, with both sets of rules. With or without the twist, you could tap it for G or B. A Plains would become a Plains Swamp, and have the ability to tap for W or B normally, R or G with the twist in play.
