Are you allowed to play spells during your upkeep, since you do not have priority?

I might have this mixed up as you can't play spells during an opponent's upkeep.

Yes you can. You can respond to them paying an upkeep cost. Instant can be played any time.

this would take some getting use to for any player. Very confusing!

Not as bad as when damage used the stack. The teleport punch was horrible. Made nantuko husk way to powerful. sengir nosferatu was to. This is much simpler that those were.

to piggyback on psyche--the first time spells can be played in any turn is the upkeep.  Even without any triggers that occur or costs needing to be paid the active player will still receive priority and priority will have to go between all players before moving on to the draw step.  So instants or spells with flash can be played on the upkeep either yours or your oppenets (spells like silence would be pointless if you couldn't play them on your opponents upkeep)

The only time during a persons turn that nobody receives priority  is during the untap step, During this step spells and abilitys can not be played, and any triggers that occur are held until the upkeep.

Normally, nobody can play spells or abilities during the cleanup step, however there is an exception, and that is when an ability occurs as part of the game state such as, "at the beginning of the clean up step" or the madness ability as a result of discarding down to 7

so other then those two times everything else is fair game as long as the spell can be cast then,

I must have confused the upkeep with untap then.

Can you cast an instant in response to someone playing a mana ability? Specifically regarding lands

Mana abilitys do not use the stack so they can not be responed to

The simple way to explain that is you don't give priority to pay costs. If you have to sac a creature as part of the cost of a spell or ability then it can't be countered. If it is part of an effect of the spell or ability it can.
