Start dropping multiple Decrees and Omens and most people don't last long.

Meishin is a great defense if needed since you can't play spells after the Ideal, although you may need some better sideboard depending on what they're playing.

If they try lifegain, drop Opalescence.

Single problematic permanents can be taken care of with O-rings.

If you get bored of only playing one spell per turn, drop a Hive Mind and start playing theirs :P

I do like EC, but I don't have any creatures in my Ideal deck so that I still have access to every card after I play it.

I do, but I use it as sideboard. I don't like my enchantments becoming vulnerable to creature-removal. I try to only use it when the Baneful Omens and Caustic Tars don't kill them fast enough.
