you get life for every spell you or they cast. The land lets yours force through, and there kill creature/ enchantment spells get shot down.

Soul's Attendant only counts for creatures.

And dovescape makes lots of creatures. Soul's attendant is "comes into play" not "is cast".

Just out of curiosity, what do you do when they beat you down with a horde of 1/1 flyers?

I get the fliers for each non creature spell i cast to. I just get to get the sorcery or instants off to. That means i can throw a simple combo trick of minor pump up to be stronger, or just let my fliers die blocking your fliers. I i can get the spell and the critters then i have a huge edge.

Just out of curiosity, what do you do when they beat you down with a horde of 1/1 flyers?

You go underground of course...
