This bothers me for a while now:
When a creature has hexproof/shroud/protection, it can't be chosen as a target. But what happens if it already chosen as a target and than gains one of these abilities (like with Ring of Evos) while the spell is on the stack? Does "can't be the target" only mean "can't be chosen as a target" or does the spell disappear since there's no valid target left?

I believe that spell that originally targeted said creature now fizzles...

Any spell or ability with all of its targets rendered illegal is countered by game rules. If it has multiple targets and at least one is still legal, it will do what it can, ignoring the illegal target.

Okay, thanks.
And I have a related topic: Blocking and unblockability.
My creature attacks and is blocked. Before the combat damage segment, I cast Veil of Secrecy on it. What happens?

once blocked its considered blocked. the veil will do nothing at this point it would need to be cast before blockers are declared
