So if i turn something like, say, my Honden of Cleansing Fire into a creature, would its creature type be Shrine, since that is its subtype?  or would it HAVE a creature type?

If I'm not mistaken, unless the card that turned it into a creature says "in addition to its other types" then it will lose its shrine subtype.

If you are playing a card like opalsence then it would be a "Legendary Creature Enchament-shirne"

if your play a card that does not state they keep there previous type (I can't think of any that affect enchantment but artifical evolution does this for creatures) then it would be a "legendary creature"

It will always retain its legendary status

right, but will Shrine then become a legal creature type to choose for cards like Standardize ?

Officially no, because shrine is not recognized as being a valid creature type, so therefore it is not a legal type to choose

Unofficially, house rules prevail, you can let the honden trigger go turn everything you control to a shrine and gain 2 life for everything.
