If I play Goryo's Vengeance on a legendary creature in my graveyard, and that creature happens to have a static effect stating "At the beginning of the end step, return this creature to its owner's hand.".......since both occur at the same time, am I right in thinking I may choose the order of the effects, and return the creature to my hand before I am required to exile it?

Since you control both, I would say yes.

Better yet, lemme also ask this.....

If this was the legendary creature in question.....

If Scion of the Ur-Dragon changed himself into a copy of a different creature, would the Goryo's effect still apply to him at the end of turn? How would that timing occur?

And one last thing.......

If Scion of the Ur-Dragon changed him self into, say,.......Yosei, the Morning Star

.......with him now being a copy of Yosei, if I put another Scion of the Ur-Dragon into play after the transformation, would the legend rule still apply to him?.......and how would the timing affect both cards at the end of turn?

To answer the questions not answered.

The delayed trigger created by goryo's will exile the scion no matter what the form it takes, as long as it never left the battlefield (ie blinking would let you keep it)

Concerning your two scion 1 is yosei question. Dying is right if you casted both scions, however, If the yosui scion was in play because of goryo and the 2nd was cast, you would keep the second. Reason is the end step consists of two phases end of turn phase and cleanup phase. Goryo exiles during the end turn phase and scions copy effect ends during cleanup. Goryo would have already removed the yousi scion before the copy ends
