I have a Spellskite in play, I play a planeswalker, my opponent tries to counter with Dissipate. I use Spellskites ability to change it to Spellskite. I can do that, right? That's how it works from what I understand:

6/1/2011: You can activate Spellskite's ability even if
Spellskite wouldn't be a legal target for the spell or ability. However,
the target of that spell or ability will remain unchanged.

When you counter something you're doing so before it comes into play so no that wouldn't work. It  would work though if you're opponent tried to burn it.
