If you used a double-striker with Celestial Mantle and 20 life. Would you gain 40 life or 60 life?

Here's what I expect would happen. You'd deal double strike damage, which triggers the mantle, getting you to 40 life. then the normal combat damage would be dealt, doubling again to 80.

Pretty much what the other 2 people have replied. You would gain 80 life in total.
