The servant adds colors to what is already there. If you choose to make things blue with it, they will still have their original color with the blue.

Damn,...Sway of Illusion on a isochron scepter will make it work...

Instead of the Servant, us Thran Lens. It makes all permanents colorless and keeps your combo mono white (even though scepter keeps that as a possibility).
